Historical Romance Holiday Cookie Hop!

I’m one of the historical authors participating in the Historical Romance Holiday Hop that features cookie recipes. My recipe is a cookie I remember my mom baking called Snowballs. The recipe is a favorite of mine because it is so simple and during this time of year, I’m really looking for simple recipes, plus they taste delicious. This is also a great recipe for children since you only need six ingredients and there are no eggs, so you can let them lick the batter off their fingers.

1 cup butter, softened.
1/4 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
2 cups finely chopped pecans
Powdered sugar

STEP 1. Heat oven to 325°F.
STEP 2. Cream butter and sugar in a medium bowl until creamy. Add vanilla;  beat until well mixed.
STEP 3. Add flour and pecans; beat at low speed, scraping bowl occasionally, until well mixed.
STEP 4. Shape dough into 1-inch balls. Place them 1 inch apart onto ungreased cookie sheets. Bake 16-18 minutes or until very lightly browned. Cool 5 minutes; roll in powdered sugar while still warm and again when cool.
